Smrdácka roláda (Smrdáky roll cake)
The spa in Smrdáky has created a special and light cake that has become sort of a local secret. This delicious taste cannot be imitated by any baker, so you can only taste the original roll here.
Recipe for an “almost” Smrdáky roll cake:
Dough: 6 eggs, 5 tablespoons of caster sugar, 3 tablespoons of dark cocoa, ½ teaspoon of sodium bicarbonate.
Filling: ½ l milk, 5 tablespoons of half-coarse flour, 1 egg, 250 g butter, 1 vanilla, 5 tablespoons of powdered sugar, 2 tablespoons of cocoa
Whisk the egg whites with sugar until beaten stiff, gradually add the egg yolks and gently blend in the sodium bicarbonate and the cocoa with a spatula. Pour the dough on a parchment paper and bake. Place on a damp cloth after baking and roll.
Stir the eggs and flour in milk and cook a thick porridge. When the porridge is lukewarm, mix in butter, whisk and divide into two parts, put vanilla in one of them and cocoa with powdered sugar in the other. Unwrap the dough once it is cool, spread first the white filling, then the dark filling over it and roll it. Decorate with chocolate, whipped cream, or with leftover dark filling and let stiffen.
