You may have never heard of them, but this delicacy made with plum jam and pork rind was presented also at the international fair in Bratislava.
This savoury pastry goes perfectly with red wine. The combination of pork rind and plum jam gives the pastry its distinct taste and smell.
Recipe for bzdúšky
The recipe was taken from the book by Radoslav Ragač and Ivana Fialová “Theresian delicacies”
1 kg plain flour, salt, yeast, 4 egg yolks, 3 packs of sour cream, 80 dkg ground pork rind, jam
Mix the pork rind, sour cream, egg yolks, salt and yeast and prepare a tender dough, then let it rise in a warm place. Roll out the dough and fold it. Cut out circles or squares, place a spoonful of jam in the middle and close it. Create a grid on top and brush with beaten egg yolk.
